Windsor local, Caroline Walker, opened Shine Cafe in 2023 to make healthy food easy and accessible to Northern Colorado. Growing up in Solana Beach, California, Caroline could find fresh food on every corner, which is something she missed the most about her hometown. Shine Cafe blends coastal freshness with Colorado heart to create a comfortable, community-centric space to eat, drink, and gather. At Shine Cafe, we are committed to healthy eating and living, and more importantly, making people SHINE as they walk through our door every day.  We love our community and are dedicated to finding ways to strengthen and support it.

Beyond the cafe, we are here to make a positive impact on our community through event involvement and sponsorship.
